Preheat grill to medium heat.Place two large squares of aluminum foil on work surface, place chicken breasts on foil and garnish with bruschetta mixture and Cheddar.
Cover with another square of aluminum foil and seal the sides tightly and cook on grill for 15 minutes. Serve immediately with vegetables.
