Bruschetta Style Pizza Pitas with Bocconcini Cheese

Ingredients
- 1/3 cup (80 mL) chopped pitted black olives
- 1/2 cup (125 mL) chopped fresh basil
- 3 large tomatoes trimmed and chopped
- 2 garlic cloves minced
- 1/4 cup (60 mL) olive oil
- Salt and pepper to taste
- 4 pita breads
- 8 oz (240 g) Canadian Bocconcini cheese sliced

Preparation
Preheat oven to 400 °F (200 °C).
In large bowl, combine first 5 ingredients. Mix well. Salt and pepper to taste. Spread pita breads evenly with mixture and top generously with Canadian Bocconcini cheese.
Bake for 10 minutes, or until cheese has melted and bruschetta are lightly grilled.
