Ingredients

  • 12 large tortillas
  • 6 green onions chopped
  • 4 tomatoes diced
  • Lettuce shredded
  • 1 cup (250 mL) peeled and diced avocado
  • Hot pepper sauce
  • 1 cup (250 mL) grated Canadian Monterey Jack* cheese
  • Sour cream
  • Refried Beans
  • 2 tbsp (30 mL) butter
  • 1 tbsp (15 mL) peanut oil
  • 1 onion chopped
  • 1 garlic clove finely chopped
  • 1 can (19 oz/540 mL) red kidney beans
  • 1 tsp (5 mL) chili powder
  • Salt and pepper to taste

Preparation

Heat tortillas in hot skillet a few seconds on each side or in oven, wrapped in foil.

Spoon refried beans about 2 inches (5 cm) from the edge of each tortillas. Top with Canadian Monterey Jack cheese, green onions, tomatoes, lettuce, avocado and a a few drops of hot sauce. Fold the bottom of each tortilla over filling, fold in sides and roll up. Serve with sour cream.

Refried Beans:

In hot skillet, sauté onion and garlic in butter and peanut oil. Add beans and chili powder and sauté for 5 to 6 minutes, stirring constantly. Season with salt and pepper to taste and cook for another 2 minutes over medium heat, mashing beans coarsely. Set aside.

* For a change of taste, try this recipe with Canadian Cheddar.
