Cajun Rice Salad with Pistachios

Ingredients
- 4 cups (1 L) cold water
- 2 tbsp (30 mL) butter
- 2 cups (500 mL) Basmati rice or white rice
- Salt and pepper to taste
- 1 large white onion diced
- 1/3 cup (80 mL) pistachios shelled
- 1 cup (250 mL) drained canned Romano beans
- 1/3 cup + 1 tbsp (90 mL) olive oil
- 3 tbsp (45 mL) cider vinegar
- 2 tbsp (30 mL) Cajun spice
- Juice of 1 lemon
- Sour cream

Preparation
In saucepan, place cold water, butter and rice. Season to taste with salt and pepper. Bring to boil, stirring twice. Reduce heat to low and simmer covered for about 20 minutes, or until liquid is completely absorbed. Remove from heat and let stand uncovered for 10 minutes.
In large bowl, mix cooked rice gently with remaining ingredients. Serve immediately with sour cream.
