Canadian Cheese Gougères

Ingredients

  • 1/3 cup (80 mL) butter
  • 1 cup (250 mL) Milk
  • A pinch of salt
  • 1 tsp (5 mL) dry mustard
  • 1 cup (250 mL) all-purpose flour sifted
  • 4 eggs
  • 1 cup (60 mL) Swiss Canadian cheese grated
  • 1/2 cup (125 mL) chopped almonds

Preparation

Preheat the oven to 375°F (190°C).

Heat butter, milk, salt, mustard. Bring to a rolling boil. Add flour all at once. Beat constantly with a wooden spoon until mixture leaves sides of the pan and forms a ball.

Remove from heat. Beat in eggs, one at a time. Beat until smooth each time. Mix in Canadian Swiss cheese.

Drop a tablespoon at a time on a buttered baking sheet, about 2 inches apart. Sprinkle with nuts.

Bake for 25 to 30 minutes, until golden brown. Serve or reheat.
