Caramelized Fennel and Grilled Queso Fresco

Ingredients
- 1 cup (250 mL) Canadian Queso Fresco cheese cut into cubes
- 1 tbsp (15 mL) melted butter
- 1 tbsp (15 mL) honey
- 1 tbsp (15 mL) chives
- Salt and freshly ground pepper to taste
- 1 fennel bulb sliced

Preparation
Preheat oven to 500 °F (260 °C).
Spread out Queso Fresco on a parchment-lined baking sheet. Grill in the oven for 5 to 7 minutes.
Remove from the oven and lower the heat to 450 °F (230 °C).
On another parchment-lined baking sheet, mix all the other ingredients and cook in the oven for 10 to 15 minutes or until fennel is tender and caramelized. Serve with the grilled Queso Fresco.
