Caramelized Onion, Blue Cheese and Spinach Dip
This is an amazing appetizer and very decadent. Serve with hand made style potato chips, Kettle Potato Chips or Lavash Flax Seed Crackers that are sturdy enough to scoop up the mixture without crumbling. Creamy dreamy Blue cheese makes it yummy any way you dunk!

Ingredients
- 1 tbsp (15 mL) butter
- 1 1/4 cup (310 mL) thinly sliced onions or shallots
- 4 cups (1 L) coarsely chopped spinach
- 3/4 cup (180 mL) crumbled Canadian Blue Cheese
- 3/4 cup (180 mL) 5 % sour cream or plain yogurt
- 1/2 cup (125 mL) light mayonnaise
- 1/4 tsp (1 mL) salt
- 1/4 tsp (1 mL) pepper
- 1 bag (7 oz/ 210 g) of kettle potato chips or Lavash Flax Seed Crackers

Preparation
In large skillet melt butter over medium heat; add onions and cook stirring frequently for 5 min or until onions are tender. Cover; reduce heat to low and cook, stirring occasionally for 15 min or until golden brown. Increase heat to medium; add spinach and stir 2 to 3 min or until wilted; remove from heat.
In medium bowl, combine cheese, sour cream and mayonnaise; mash with back of wooden spoon until cheese pieces are to desired consistency. Stir in onion mixture, salt and pepper. Cover and refrigerate to allow flavours to blend for 1 hr or up to 1 day.
Tips
Dip can be prepared and refrigerated up to one day (24 hours) in advance; the flavours are enhanced as the dip rests. Dip is delicious used as a spread or condiment for wraps, sandwiches, or barbecue hamburgers.
Variation:Stir in 1/4 cup (60 mL) crumbled bacon bits before serving.
