Cheddar & Chorizo Green Peas

Ingredients
- 2 oz (60 g) chorizo sliced
- 1 onion chopped
- 2 cups (500 mL) sugar snap peas
- 2 cups (500 mL) frozen or freshly shelled green peas
- 1 1/2 tbsp (25 mL) honey
- Salt and freshly ground pepper
- 2 oz (60 g) Canadian Cheddar

Preparation
In a large saucepan, cook chorizo for 2 min on medium-high heat.
Add onion and cook for 2 more min.
Add peas and cook for 5 more min. If using fresh peas, add ⅓ cup (75 mL) water to the saucepan and cover while cooking.
Add honey and season with salt and pepper. Cook for 2 more min.
Using a peeler, shave thin slivers of cheese over the dish before serving.

Cheese alternatives:Canadian Aged or Medium Cheddar, Gouda.
