Ingredients

  • 2 cups (450 g) bacon, diced or sliced
  • 2 cups (350 g) yellow onions, thinly sliced
  • 1 cup (227 g) Canadian cream cheese, at room temperature
  • 1 cup (250 g) Canadian sour cream
  • ½ cup (125 g) mayonnaise
  • 1 cup (250 g) shredded Canadian mozzarella cheese
  • Salt and pepper, to taste
  • 2 tbsp (6 cloves) minced garlic
  • 1 tbsp (5 g) fresh thyme
  • 2 tbsp (10 ml) balsamic vinegar
  • 2 tbsp (10 g) brown sugar

Preparation

Cook the bacon in a large skillet over medium-high heat until crisp. Remove the bacon and set aside, leaving about ¼ of the rendered fat in the pan.

Add the sliced onions with a pinch of salt and a splash of water. Cook over medium-high heat. Add a few drops of water as needed to prevent burning, stirring frequently until the onions are deeply caramelized (about 25 to 30 minutes).

Meanwhile, in a bowl, mix the cream cheese, sour cream, mayonnaise, ⅔ of the shredded mozzarella, salt, pepper, and the crispy bacon (reserve a bit for garnish). Set aside.

In the last 2–3 minutes of cooking the onions, add the garlic, thyme, balsamic vinegar, and brown sugar.

Let the caramelized onions cool slightly before stirring them into the creamy mixture.

Transfer everything to a baking dish, then top with the remaining mozzarella and cooked bacon.

Bake at 175°C (350°F) for 10 minutes, then broil for 2–3 minutes until the top is golden and bubbly.

Serve warm with crackers or toasted bread. Enjoy!
