Chicken Livers with Potatoes, Spinach, and Canadian Swiss Cheese

Ingredients
- 10 oz (310 g) fresh spinach stalks removed and washed
- 3 tbsp (45 mL) olive oil
- 2 oz (60 g) butter
- 1 potato
- 1 onion sliced thin
- 8 chicken livers
- 1 tsp (5 mL) fresh thyme
- 3 oz (90 g) Canadian Swiss* cheese sliced
- Salt and freshly ground pepper to taste

Preparation
In a frying pan, cook spinach for 2,3 minutes in olive oil and butter. Season and set aside.
Cut 4 1/4-inch (1/2 cm) thick slices from the potato. In a frying pan, cook potato slices slowly in a little olive oil and butter for about 4 to 5 minutes. Season to taste with salt and pepper and set aside.
Sauté onion in a little olive oil and butter.
Preheat broiler.
Trim the livers and slice them in two. Place on a baking sheet, drizzle with olive oil, sprinkle with a little thyme and season with salt and pepper. Just before serving, place under broiler for 2 minutes.
To serve, arrange a potato slice, a little onion, spinach, chicken liver and Canadian Swiss cheese on 4 plates.
