Chocolate & Dulce de Leche Ice Cream Sandwiches

Ingredients

  • Cookies
  • 1 cup (200 g) unsalted Canadian butter, at room temperature
  • 2/3 cup (160 g) brown sugar
  • 1 egg
  • 1 1/4 cup (300 g) dark chocolate, melted
  • 1 1/3 cups (200 g) flour
  • 2 teaspoons (10 g) baking powder
  • 2 tablespoons (30 g) pure cocoa powder
  • Dulce de leche filling
  • 1 ½ cups (200g) dulce de leche made with Canadian milk
  • 2 liters Canadian vanilla ice cream, softened

Preheat oven to 350°F (180°C).

Line 2 or 3 baking sheets with parchment paper (depending on the size of your sheets).

In a mixer, cream the butter with the brown sugar. When the mixture is creamy, add the egg, melted chocolate, flour, baking powder and cocoa powder. Mix until smooth. Set aside.

Form 16 balls of about 2 tablespoons of cookie dough and place on baking sheet. Space cookies at least 5 cm (2 in) apart.

Place in the freezer for 10 minutes until chilled, then bake for 20 minutes or until a crust forms. Cool for about 15 minutes.

Assembly

Spread dulce de leche on each cookie, then place ice cream between cookies to make sandwiches.
