Chocolate Tart

Ingredients

  • 1 tbsp (15 mL) butter
  • 1/4 cup (60 mL) graham wafer crumbs
  • 1 lb (450 g) bittersweet chocolate
  • 2 1/2 cups (625 mL) 35% cream
  • 1 tbsp (15 mL) orange juice or orange liqueur
  • Cocoa powder

Preparation

Butter bottom and sides of 9-inch (23 cm) springform pan. Sprinkle with wafer crumbs.

Melt chocolate in a bowl over a pan of simmering water. Cool for 5 min.

Meanwhile, whip 1 1/2 cups (375 mL) cream just until it begins to thicken. Mix it together with chocolate and beat just until blended. Pour into prepared pan.

Whip remaining cream (1 cup/250 mL) and orange juice until light. Spread over chocolate layer. Chill for 3 hrs or overnight.

Remove from springform pan. Place paper doily over tart. Dust with cocoa powder; carefully remove doily. Can be frozen for up to two weeks.
