Coffee Bean Cookies

Ingredients
- 1 tsp (5 g) instant coffee
- 2 tsp (10 ml) boiling water
- 1/3 cup (75 g) unsalted Canadian butter, softened
- 2/3 cup (70 g) powdered sugar
- 1 egg yolk
- 1 cup (120 g) all-purpose flour
- 1 tbsp (12 g) cocoa powder

Preparation
Set the oven to 350°F (175°C).
Prepare instant coffee by adding 10 ml boiling water to 5 g instant coffee.
Mix softened butter and powdered sugar.
Stir in coffee, egg yolk, flour and cocoa powder.
Once the dough is smooth, shape into a large ball.
Divide the dough into small balls (8g each/ 3cm). Shape each piece between your fingers into oval balls (coffee-bean shaped).
Place on a baking sheet lined with parchment paper.
Use a thin knife to make a slot in the center of each bean. The slot must be hollow enough, otherwise it will disappear during baking.
Place in the oven for approx. 15 min.
Cool on a plate.
Tips
If the slot has faded during baking, use a knife to go over it again while the cookies are still warm.
