Cottage Cheese Flatbread Sandwich

A simple, colourful and delicious cheesy sandwich, where cottage cheese is used in a very original way: it becomes the "bread" of your sandwich. Throw in some yogurt and fresh vegetables for a fresh and tasty snack.

  • 1 cup (250 g) Canadian cottage cheese
  • 1 tablespoon (10 g) fresh or dried oregano
  • 1 avocado or 1/2 cup (80 g) guacamole
  • 3/4 cup (80 g) grated carrots
  • A little bit of arugula
  • For the sauce
  • 2 tablespoons (25 g) Canadian Greek yogurt
  • Juice of half a lime
  • A few chopped mint leaves
  • Salt and pepper

Preheat oven to 350°F (175°C).

Using parchment paper, spread cottage cheese in a rectangle (approx. 8 x 5 in / 20 x 12 cm) on a baking sheet and sprinkle with oregano.

Bake for 30 to 40 minutes.

Meanwhile, prepare the sauce in a bowl. Mix yogurt, lime juice, chopped mint and salt and pepper to taste.

Once the cottage cheese flatbread is cooked (the sides should be golden brown), remove from the oven and leave to cool.

Cut the cottage cheese flatbread in half and spread the guacamole, grated carrots and arugula on one half, then top with the sauce.

Close the sandwich and enjoy!
