Ingredients

  • 1 lb (450 g) lean ground pork
  • 3 tbsp (45 mL) fresh coriander chopped
  • 1 tsp (5 mL) Worcestershire sauce
  • 2 tbsp (30 mL) ketchup or chili sauce
  • 1 egg
  • 2 tbsp (30 mL) chopped raisins
  • 1 clove garlic minced
  • Salt and pepper to taste
  • 2 tbsp (30 mL) butter
  • 1 cup (250 mL) couscous semolina or bulgur
  • 2 cups (500 mL) water
  • 2 tbsp (30 mL) butter
  • 18 whole almonds

Preparation

Mix together pork, half coriander, Worcestershire sauce, ketchup or chili sauce, egg, chopped raisins and garlic. Season with salt and pepper.

Shape meat into balls about the size of walnuts.

In large skillet, heat 2 tbsp (30 mL) of butter and cook meatballs for 2 to 3 minutes. Set aside.

Place semolina or bulgur in an ovenproof dish, then heat water and 2 tbsp (30 mL) of butter. Pour boiling water over semolina or bulgur and cook in oven at 300 °F (150 °C) for 15 minutes. Place meatballs and whole almonds on top. Cook an additional 2 to 3 minutes and sprinkle with fresh coriander.
