Cranberry and Brie

Ingredients

  • 1 sheet (227 g) puff pastry, thawed
  • 2-3 tbsp (30-45 ml) cranberry sauce
  • 1 small wheel (200 g) Canadian Brie cheese, sliced
  • 2 tbsp (30 ml) pistachio nuts, roughly chopped (can also substitute pecans or walnuts)
  • 1 egg, beaten

Preparation

Preheat your oven to 400°F and line a baking sheet with parchment paper.

Roll out the puff pastry on a surface dusted with a bit of flour until it's 5mm thick.

Create a 30cm circle, and within that, mark a smaller 10cm circle in the centre.

Carefully cut eight triangles from the centre towards the marked line, making sure not to cut them completely out. This will create a star shape. Move the pastry circle to a parchment-lined sheet.

Spread cranberry sauce onto the center "star" and top it with Canadian Brie and pistachios.

Fold one point of the center star over the filling, and bring the outer edge of the pastry inwards, pressing them together. Repeat this process until you have formed a wreath shape.

Brush the entire pastry with beaten egg, then place it in the preheated oven. Bake for approximately 15 minutes or until the pastry turns golden brown and is thoroughly cooked.

Remove from the oven, allow to rest for 5 minutes, then slice and serve. Enjoy!
