Ingredients
- Vegetables
- Cut-up zucchini diced sun-dried tomatoes
- Sliced black olives
- Sliced green onions diced
- cooked potatoes
- chopped red pepper
- Sliced mushrooms, sliced celery, chopped red onion
- Herbs
- Oregano
- Thyme
- Dill
- Meat/Fish
- Cut-up, cooked pork or shrimp (optional)
- Chopped ham or cooked crumbled bacon (optional)
- Cooked salmon or cooked cut-up chicken (optional)
- Canadian Cheese
- Crumbled Feta
- Sliced Brie or Camembert
- Grated Swiss or Havarti with herbs

Preparation
Cook 2 cups (500 mL) vegetables, 1 minced garlic clove and herbs, to taste, in 2 tbsp (30 mL) butter in large frypan until tender. Add 1/2 cup (125 mL) cooked meat/fish, if desired; cover and keep warm.
Beat 8 eggs with 2 tbsp (30 mL) water. For each omelette pour 1/2 cup (125 mL) egg mixture into 8-inch (20 cm) frypan containing 2 tsp (10 mL) melted butter. Cook, stirring and tilting pan, until eggs are set.
Fill one side of omelette with part of the cooked vegetables and cheese (as much as you like). Fold over unfilled half of omelette and top with more cheese and chopped parsley, if desired.
