Creamy Chicken Pita Pockets

Ingredients
- 1 boneless skinless chicken breast cut in strips
- 1 tbsp (15 mL) olive oil
- Salt and pepper to taste
- A few pinches of dried oregano
- A few pinches of dried thyme
- Tomato slices
- Lettuce leaves
- 4 pita bread halved to form pockets
- Creamy Cucumber Salad
- 1/4 cup (60 mL) white vinegar
- 2 tbsp (30 mL) liquid honey
- Seasoned salt to taste
- 1 English cucumber peeled and grated
- 1/3 cup (80 mL) plain yogurt

Preparation
In skillet, sauté chicken in oil and season with salt, pepper, oregano and thyme. Place strips of grilled chicken, Creamy Cucumber Salad, tomato slices and lettuce in pita pockets. Serve with coleslaw and home-made French fries.
Creamy Cucumber Salad:
In bowl, mix vinegar, honey, salt and cucumber. Let mixture rest for 1 hour. Strain mixture and stir in yogurt. Mix well. Keep in refrigerator.
