Creamy Farfalle with Shrimp

Ingredients

  • 2 tbsp (30 mL) butter
  • 1/2 red onion finely chopped
  • 1 green bell pepper chopped
  • 1 lb (450 g) large shrimp shelled and deveined
  • 3 cups (750 mL) farfalle
  • 2/3 cup (160 mL) dry white wine
  • Salt and pepper to taste
  • 1 cup (250 mL) grated Canadian Mozzarella cheese
  • 1/2 cup (125 mL) 35 % cream

Preparation

In large saucepan, cook shrimp for 3 minutes over medium heat or until pink. Remove shrimp from saucepan and reserve. In same saucepan, sauté onion and bell pepper in butter for 2 minutes. Set aside.

Cook farfalle in saucepan of salted boiling water, until al dente. Drain without rinsing. Set aside.

Stir white wine into reserved vegetable mixture and bring to boil. Reduce heat and simmer, until liquid is reduced to half. Season with salt and pepper to taste. Turn off heat and stir in Canadian Mozzarella cheese, cream, reserved shrimp and pasta. Serve immediately.
