Creamy Maple Curry Chicken
Warm up on a cold day with a bowl of mildly spiced curried chicken and veggies. Maple syrup adds a touch of sweetness to the creamy sauce.

Ingredients
- 1 tbsp (15 ml) Canadian butter
- 4-6 chicken thighs (or substitute with shrimp cut in bite-size pieces)
- 1 large onion chopped
- 1 red pepper chopped
- 6-8 mushrooms sliced
- 3 cloves garlic minced
- 1 tsp (5 ml) sugar
- ¼ cup (60 ml) maple syrup
- 1 cup (250 ml) Canadian whipping cream
- 3 tbsp (45 ml) curry powder

Preparation
Heat butter in a pan and fry the chicken
Add the onion, pepper and mushrooms and fry until softened
Add garlic and sugar and cook for 1 minute
Add maple syrup and cook 5 minutes or until caramelized
Add whipping cream and curry powder and simmer until thickened
Serve with pasta of your choice
Tips
If you like it spicy, add some chili flakes.
