Creamy Shrimp on Croissant

Ingredients

  • 2 tbsp (30 mL) plain yogurt
  • 2 tbsp (30 mL) mayonnaise
  • 2 tbsp (30 mL) chili sauce
  • 1 tbsp (15 mL) horseradish sauce
  • Salt and Freshly ground black pepper to taste
  • 1 cup (250 mL) northern shrimp
  • 1 celery stalk chopped
  • 3 green onions chopped
  • Juice of 1/2 lemon
  • 1/3 cup (80 mL) chopped marinated artichokes hearts
  • 4 croissants cut in half lengthwise
  • Lettuce leaves
  • Canadian Canadian-Swiss cheese

Preparation

Preheat broiler.

In large bowl, mix yogurt, mayonnaise, chili sauce and horseradish. Season to taste with salt and pepper. Stir in shrimp, celery, green onions, artichokes hearts and lemon juice. Divide mixture among croissant halves and top with lettuce and Canadian Canadian-Swiss cheese. Grill for 2 minutes in oven. Serve with dill pickles and lemon wedges.
