Croissant Ice Cream Sandwich

Smothered with golden syrup, sugar, and cinnamon this decadent croissant ice cream sandwich makes for a delicious summer recipe! Enjoy with maple ice cream or any flavour you prefer.

Ingredients

  • 2 croissants
  • 1 tbsp (15 ml) Canadian butter
  • 2 tbsp (30 ml) golden corn syrup or maple syrup
  • 1 tsp (5 ml) cinnamon
  • 1 tbsp (15 ml) sugar
  • 1 ½ cups (375 ml) Canadian ice cream, maple

Preparation

Place the croissants on a clean surface and use a rolling pin to flatten them until they reach a thickness of approximately 1/8 inch.

In a frying pan, melt the Canadian butter over medium heat. Once the butter is fully melted, add the flattened croissants to the pan.

Take a piece of parchment paper and place it over the croissants in the pan. Then, put a heavy pot or pan on top of the parchment paper to help flatten the croissants further.

In a small bowl, combine cinnamon and sugar, mixing them together well. Set this mixture aside for later use.

After approximately 2 minutes of cooking the croissants, carefully remove the heavy pot and drizzle golden corn syrup over the croissants. Ensure the syrup is evenly distributed.

Sprinkle the cinnamon sugar mixture generously over the croissants, coating them completely with the sweet and aromatic mixture. Flip the croissant and cook for 2 more minutes.

Remove the frying pan from the heat and allow the croissants to cool for about 3-5 minutes. This will ensure they firm up slightly and become easier to handle.

Once the croissants have cooled, take one croissant and scoop a generous portion of ice cream onto it. Then, place the second croissant on top, creating a sandwich.

Serve the croissant ice cream sandwich immediately
