Ingredients

  • 1 1/4 lbs (560 g) boneless skinless chicken breasts cut in cubes
  • 1 red bell pepper in chunks
  • 16 sweet pearl onions
  • Curry and Ginger Marinade
  • 1/2 cup (125 mL) melted butter
  • 2 tsp (10 mL) curry powder
  • 1 tsp (5 mL) instant vegetable broth mix
  • 1 tsp (5 mL) dry mustard
  • 1 tbsp (15 mL) chopped fresh ginger
  • 1 garlic clove finely chopped
  • Juice of 1 lemon

Preparation

Add chicken cubes to marinade. Mix well. Cover and refrigerate for 6 hours.

On 8 skewers, thread chicken alternately with pepper chunks and onions. Grill over medium-high heat for 15 to 18 minutes, turning occasionally. Serve with wild rice and steamed green beans.

Curry and Ginger Marinade:

In large bowl, mix all ingredients. Set aside.
