Delicious Kiwi Pancakes

Ingredients

  • Pastry cream
  • 2 cups (500 mL) milk
  • Vanilla extract or 1 vanilla bean
  • 6 egg yolks
  • 5 oz (150 g) sugar
  • 2 oz (50 g) flour
  • Pancakes
  • 2 cups (500 mL) milk
  • 2 cups (240 g) flour
  • 3 eggs
  • 1 pinch salt
  • 1 oz (30 g) sugar
  • 1 oz (30 g) melted butter
  • 1 oz (30 g) butter (to cook)
  • Garnish
  • 6 kiwis peeled and sliced
  • 1 oz (30 g) sugar
  • 2 cups (600 mL) raspberry sauce

Preparation

Pastry cream:

In a large saucepan, bring milk to boil with vanilla extract or bean.

In a mixing bowl, beat eggs with sugar until smooth. Gradually blend in flour. Pour in half of the scalded milk, beating vigorously. Immediately pour mixture back into remaining milk and beat vigorously over high heat until mixture comes to the boil, then pour in a salad bowl to cool. Rub surface with a little piece of butter so a skin doesn't form.

Pancakes:

In a large bowl, mix flour, salt, sugar and eggs. Add milk gradually and stir until batter is smooth. Blend in melted butter, then cook pancakes in a frying pan.

Place pancakes on a work surface. In the middle of each one, spread a little pastry cream and add two kiwi slices. Roll up and place on a cookie sheet. Sprinkle with sugar and bake in 400 °F (200 °C) oven 15 minutes.

Carefully remove to a serving plate. Surround with ribbons of warm raspberry sauce and decorate with a kiwi slice. Serve hot.
