Duck mignons with Apples and Cheese

Ingredients
- 1 tbsp (15 mL) butter
- 1 garlic cloves chopped
- 1/2 onion chopped
- 2 apples peeled and diced
- 1/2 cup (125 mL) white wine
- Salt and freshly ground pepper to taste
- 1 1/3 lb (600 g) boneless duck breasts
- 5 oz (150 g) Canadian Délice des Appalaches cheese cut into thin 1 inch x 1 inch (2.5 cm x 2.5 cm) slices

Preparation
To prepare the apple puree, melt butter in a saucepan and sauté garlic and onion 3,4 min. Deglaze with wine and reduce by one third.
Add apples and season to taste. Cook for a few minutes over a gentle heat until the apples break down into a puree.
Slice the duck breasts into 3/4 inch (2 cm) thick rounds (mignons).
In a frying pan, quickly sear the mignons over a high heat. Season with salt and pepper.
Spread the apple puree over the mignons and cover with slices of Canadian Délice des Appalaches cheese.
Continue cooking for 10 minutes in oven, preheated to 425 °F (210 °C).
