  • 1 1/4 cups (310 mL) all-purpose flour
  • 1/4 cup (60 mL) cold hard butter diced
  • 2 tbsp (30 mL) sugar
  • 2 tbsp (30 mL) cold water
  • 2 tsp (10 mL) white vinegar

Preheat oven to 375 °F (190 °C).

In food processor, combine flour, butter and sugar; process using on/off turns until mixture resembles coarse crumbs. Add water and vinegar; process using on/off turns until mixture barely holds together. (Mixture sticks together when pressed between fingers.)

Turn into 9-inch (23 cm) tart pan or pie plate; spread evenly over bottom and up side, pressing firmly so mixture holds together. Refrigerate for 15 min.

Prick pastry all over with fork. Line with foil; cover with dried beans or pie weights. Bake for 20 min. Remove foil and beans; bake for 10 min longer or until golden.
