Egg Roll with Canadian Mozzarella and Fresh Herbs

Ingredients
- 1 tbsp (15 mL) butter
- 1 medium onion sliced
- 1/2 red bell pepper julienned
- Salt and pepper to taste
- 4 large eggs
- 1/3 cup + 1 tbsp (90 mL) 35 % cream
- 1/2 cup (125 mL) Canadian Mozzarella shredded
- 1 small green onion sliced
- 2 large basil leaves minced
- 1 sprig of fresh tarragon minced

Preparation
In a non-stick, oven-proof pan, melt the butter and sauté the onion and red pepper over medium heat 5 min.
In a bowl, whisk the eggs and the cream together. Season with salt and pepper. Add the eggs to the pan and with a spatula, swirl the mixture over medium heat to cook 2,3 min the bottom of the omelette. Stop swirling when you see that the mixture is starting to coagulate. Let it cook for about 3 minutes. Add the Canadian Mozzarella, green onions and herbs on the top all around.
Bake under the broiler for no longer than 2 minutes or until the edges start to detach from the sides.
To serve, roll up the egg mixture, forming a cigar shape. Cut in half.
