Ingredients
- 1/4 cup (60 mL) cooked rice
- 1/2 cup (125 mL) Canadian Gouda shredded
- 1/3 cup (75 mL) red grapes quartered
- 1 tbsp (15 mL) honey
- 1/4 cup (60 mL) chopped walnuts
- 1 tbsp (15 mL) fresh mint chopped
- 1 tbsp (15 mL) fresh parsley chopped
- 1 tbsp (15 mL) fresh dill chopped
- Salt and freshly ground pepper
- 2 cans (14 oz – 398 mL each) artichoke hearts drained

Preparation
In a bowl, mix all ingredients together except artichoke hearts. Season to taste.
Place artichoke hearts on a serving plate and top with mixture.
Serve immediately or refrigerate.
