Ingredients

  • 1/4 cup (60 mL) cooked rice
  • 1/2 cup (125 mL) Canadian Gouda shredded
  • 1/3 cup (75 mL) red grapes quartered
  • 1 tbsp (15 mL) honey
  • 1/4 cup (60 mL) chopped walnuts
  • 1 tbsp (15 mL) fresh mint chopped
  • 1 tbsp (15 mL) fresh parsley chopped
  • 1 tbsp (15 mL) fresh dill chopped
  • Salt and freshly ground pepper
  • 2 cans (14 oz – 398 mL each) artichoke hearts drained

Preparation

In a bowl, mix all ingredients together except artichoke hearts. Season to taste.

Place artichoke hearts on a serving plate and top with mixture.

Serve immediately or refrigerate.

Cheese alternatives: Canadian Cheddar, Mozzarella, Brick, Colby.
