Ingredients

  • 1/4 cup (60 mL) unsalted butter melted
  • 1/4 cup + 2 tbsp (90 mL) maple syrup
  • 3 tbsp (45 mL) ground walnuts
  • 4 sheets of frozen phyllo dough defrosted
  • 5 oz (150 g) Canadian Gouda shredded
  • 3/4 cup (180 mL) fresh or frozen cranberries defrosted, halved or fresh or frozen raspberries
  • Maple sugar to taste

Preparation

Preheat oven to 400 °F (200 °C).

In a small bowl, combine butter and 2 tbsp (30 mL) of maple syrup. Brush on 1 sheet of phyllo dough and sprinkle with walnuts. Place second sheet of phyllo on top, brush with butter mixture and sprinkle with walnuts and repeat for third sheet. Top with remaining sheet.

Cut stack crosswise and lengthwise into 4 squares. In centre of each square, place a quarter of the cheese and the cranberries then the remaining maple syrup.

Brush edges of each square stack of dough with butter mixture. Fold 2 opposite points to meet in centre. Starting at remaining point, roll up to the last point, encasing filling. Cover a cookie sheet with parchment paper; place rolls on sheet.

Brush with remaining butter mixture, sprinkle with maple sugar and bake in centre of oven for 10 minutes or until golden. Serve hot or warm.

Tips

You can prepare these pastries ahead but bake them at the last minute. Freezing is not recommended.

For a change of taste, try with Canadian Cheddar, Cream Cheese, Havarti, Brie, etc.
