Ingredients

  • 1/4 cup (60 mL) butter
  • 1 1/2 cup (375 mL) 35 % cream
  • 2 tbsp (30 mL) vodka - optional
  • 8 oz (250 g) smoked salmon diced
  • 1/2 tsp (2 mL) salt
  • 1/2 tsp (2 mL) pepper
  • 2 tbsp (30 mL) chopped fresh dill
  • 11 1/2 oz (375 g) fettuccine
  • 1/2 cup (125 mL) grated Canadian Parmesan cheese

Preparation

Melt butter in a large deep skillet. Add cream. Bring to a boil. Add vodka. Reduce heat and cook on low 3 to 4 min until slightly thickened. Add smoked salmon, salt, pepper and dill. Remove from heat.

Cook fettuccine according to directions on package until al dente. Drain.

Reheat sauce. Place pasta in the pan with the hot sauce. Toss gently over low heat until sauce coats fettuccine and is thick and creamy. Sprinkle with Parmesan cheese. Taste and adjust seasoning if necessary.
