Ingredients

  • 5 oz (150 g) smoked trout
  • 2/3 cup (160 mL) butter
  • Juice of half a lime
  • A few drops of Tabasco sauce
  • 2 tbsp (30 mL) caviar (optional)
  • Fresh parsley or fresh chives chopped

Preparation

Purée smoked trout in a food processor. Add butter, lime juice, and Tabasco sauce. Mix thoroughly to obtain a perfectly smooth texture. Pour into a bowl and use a plastic spatula to carefully blend in caviar and chopped parsley.

Add pepper and adjust seasoning if more salt is required. Smoked trout is always relatively salty, depending on the brand or the smoking technique used.

This delicious topping can be served in many ways:

Spread on Melba toast or crackers.

Add to small tartlets.

Spread on smoked salmon slices, roll, and cut into slices (refrigerate before slicing).

Use as a garnish in mini puff pastries.

Roll in nori seaweed sheets (used for sushi) and cut into slices.

Roll in rice sheets and cut into small sections.

Tips

About caviar: We recommend using small, firm-grain caviar such as red lumpfish or flying fish caviar (frequently used in sushi), available at all fish and seafood stores.
