French Toast with Cream Cheese

Ingredients
- 8 slices French bread about 1/2 inch (1.5 cm) thick, preferably stale
- 4 oz (125 g) Canadian Cream cheese softened
- 1/2 cup (125 mL) raspberry jam
- 4 eggs
- 1/2 cup (125 mL) Milk
- 1/2 tsp (2 mL) vanilla extract
- 1 tbsp (15 mL) vegetable oil

Preparation
Spread Canadian Cream cheese evenly on 4 slices of bread. Spread jam over cheese, on each slice. Top with remaining slices of bread.
Beat together eggs, milk and vanilla extract in a shallow dish just large enough to hold the four sandwiches. Place sandwiches in dish and soak each side with egg mixture.
Heat oil in non-stick skillet over medium-low heat. Fry sandwiches until golden brown, 2 1/2 to 3 minutes per side. Sprinkle with icing sugar and serve.
Ham and Cheese Toast:
Substitute one slice cooked ham and a few thin slices of Canadian Swiss cheese for the Canadian Cream cheese and jam.
