Frittata

Ingredients
- Vegetables
- Onion, green pepper and mushrooms or Cooked, drained spinach, sweet red pepper and eggplant or Diced cooked potato, asparagus and drained oil-packed sun-dried tomatoes
- Meat or Fish
- Diced ham or Polish sausage or Cooked shrimp, flaked salmon or meatless*
- Salami, pepperoni or meatless*
- Herbs
- Parsley or Oregano or Basil
- Canadian Cheese
- Cheddar or Crumbled Feta or shredded Gouda or Shredded Mozzarella, Swiss or grated Parmesan

Preparation
In a 10-inch (25-cm) non-stick frying pan, stir-fry 2 cups (500 mL) cut-up Vegetables and 3/4 cup (180 mL) Meat or Fish in a little melted butter.
Beat together 8 eggs, a handful of Canadian cheese, 1/4 cup (60 mL) milk and Herbs to taste. Pour into pan. Cover and cook over medium-low heat until eggs are almost set, 10 to 12 minutes.
Sprinkle with more Canadian Cheese and broil until eggs are set and cheese is melted.
Tips
*For a meatless variation increase Vegetables to 3 cups (750 mL).
