Fruit Salad with Bocconcini and tarragon

Ingredients
- Your choice of fruit from the following, to make 4 cups (1 L) of fruit cut into bite-sized pieces
- Honeydew melon
- Red apples sliced
- Pears sliced
- Red plums quartered
- Green grapes halved
- 2 tbsp (30 mL) honey
- 1/4 cup (60 mL) apple juice
- 2 tsp (10 mL) fresh tarragon chopped
- 4 large Bocconcini quartered

Preparation
Using a melon baller, scoop balls from the honeydew.
In a large bowl, mix the fruit, honey, apple juice and tarragon.
Add the Bocconcini and stir gently.
Let macerate for a few minutes, then serve.
