Fruit Salad with Bocconcini and tarragon

The combination of ripe fruit, creamy Bocconcini cheese and fresh tarragon offers an explosion of flavor and freshness. Everyone will fall for this salad!

Ingredients

  • Your choice of fruit from the following, to make 4 cups (1 L) of fruit cut into bite-sized pieces
  • Honeydew melon
  • Red apples sliced
  • Pears sliced
  • Red plums quartered
  • Green grapes halved
  • 2 tbsp (30 mL) honey
  • 1/4 cup (60 mL) apple juice
  • 2 tsp (10 mL) fresh tarragon chopped
  • 4 large Bocconcini quartered

Preparation

Using a melon baller, scoop balls from the honeydew.

In a large bowl, mix the fruit, honey, apple juice and tarragon.

Add the Bocconcini and stir gently.

Let macerate for a few minutes, then serve.
