  • 1 cup (250 mL) 35 % cream
  • 8 oz (225 g) bittersweet dark chocolate coarsely chopped

Preparation

Start by gently bringing cream to boil. Pour overchopped chocolate, let stand for 2 minutes, and whisk everything together until silky smooth.

Tips

When barely warm and liquid, ganache can be poured over a cake or torte for a smooth and shiny glaze. If cooled to room temperature it becomes a spreadable filling and frosting. Refrigerated ganache can be whipped for fillings and frostings or formed into chocolate truffles.
