
Giant Cottage Cheese, Chocolate & Berry Pancake
Giant chocolate & berry crêpe to share. The perfect recipe for brunch with family, friends or at the cottage! Just one big pancake to prepare, so no need to stand in front of the frying pan all morning.

Ingredients
- Wet Ingredients
- - 1 cup cottage cheese
- - 3 eggs
- - 1 ¼ cups milk
- - 1/4 cup canola oil
- - 1 tsp vanilla extract (or almond extract)
- Dry Ingredients
- - 1 ½ cups all-purpose flour (or whole wheat flour)
- - ½ cup cocoa powder
- - 1 tbsp baking powder
- - ¼ cup sugar
- - 1 pinch of salt
- Topping Options
- - Fresh raspberries (or frozen)
- - Fresh blueberries (or frozen)
- - Fresh strawberries (or frozen)
- - Chocolate chips

Preparation
1. Preheat the oven to 350°F. Grease a baking sheet.
2. In a blender, combine the wet ingredients. Add the dry ingredients and blend just until smooth (be careful not to overmix).
3. Pour the batter onto the greased baking sheet.
4. Distribute the toppings of your choice over the batter.
5. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
6. Cut into portions and serve. Optionally, top with yogurt, maple syrup, and/or additional fruit.
Tips
This giant pancake keeps well in the refrigerator for up to 3 days. It's perfect to reheat for breakfast or as a snack!
