Gloppy Oysters

Ingredients
- 12 medium oysters
- 2 cups (500 mL) tomato sauce
- 2 oz (60 g) pancetta thinly sliced and julienned
- 8 oz (250 g) Canadian Bocconcini* sliced
- 2 cups (500 mL) bechamel sauce
- 1/4 cup (60 mL) Canadian Parmesan grated
- Butter
- Salt and pepper to taste

Preparation
Preheat oven to 425 °F (225 °C).
Saute oysters in small amount of butter, over high heat, approximately 2 minutes. Season lightly with salt and pepper.
Lightly butter the bottom of 4 individual ramekins (baking dishes) or use a large one. Divide tomato sauce among dishes. Place oysters on top of sauce. Sprinkle on pancetta. Layer on Canadian Bocconcini, bechamel sauce and grated Canadian Parmesan.
Bake 20 minutes in center of oven.
Tips
*For a change of taste, try it with sliced Canadian Provolone or Mozzarella.
