Ingredients

  • 8 to 10 dried apricots
  • 1/2 cup (125 mL) raisins
  • 1/2 cup (125 mL) dried cranberries
  • 1/2 tsp (2 mL) ground nutmeg
  • 1/4 tsp (1 mL) ground cinnamon
  • 1/4 cup (60 mL) cranberry juice
  • 3/4 cup (180 mL) shredded Canadian Gouda
  • 13 oz (400 g) frozen puff pastry dough defrosted

Preparation

Preheat oven to 400 °F (200 °C).

Using a food processor, chop raisins, apricots and cranberries. Add spices and process, gradually adding cranberry juice. Set aside.

Roll out puff pastry dough 1/4 inch (0.5 cm) thick, with straight edges. Spread dried fruit mixture over dough and cover with cheese then roll up. Cut cylinder into 1/2 inch (1 cm) slices. Place slices on a cookie sheet greased with butter or covered with parchment paper.

Bake for 10 to 15 minutes or until golden.

Serve hot or at room temperature with strips of dried mango and fresh strawberries.

Tips

Although the spirals can be prepared ahead and stored in a sealed container, they're best when prepared and baked just before serving. They can also be frozen prior to baking.

For a change of taste, try with Canadian Cheddar or Mozzarella, etc.
