"Grasshopper" Pie

Ingredients
- 1 1/4 cups (310 mL) chocolate cookie crumbs
- 1/4 cup (60 mL) butter melted
- 1 cup (250 mL) 35 % whipping cream
- 3 cups (750 mL) mini marshmallows
- 2 tbsp (30 mL) green crème de menthe
- Garnish
- Chocolate curls
- Fresh raspberries
- Fresh mint

Preparation
Combine cookie crumbs and butter; press firmly onto bottom and sides of 9-inch (23 cm) pie plate. Set aside.
In a chilled bowl, whip cream just to firm peaks; set aside.
Microwave marshmallows in large microwavable bowl on High 50 seconds or until marshmallows are puffed and almost melted. Stir until marshmallows are completely melted. With an electric mixer beat in crème de menthe until combined; fold into whipped cream. Spoon mixture into pie crust and smooth top. Refrigerate for 1 hour or until set (or for up to 1 day). Garnish with chocolate, raspberries and fresh mint leaves.
