Greek Style Giant Shrimp over Capellini
This is the Greek Style Giant Shrimp over Capellini recipe.

Ingredients
- 2 tbsp (30 mL) butter
- 2 garlic cloves finely chopped
- 4 green onions chopped
- 1 1/4 lb (560 g) giant shrimp shelled, deveined and cut in 2 lengthwise
- Fresh basil
- Fresh oregano
- Salt and pepper to taste
- A dash of hot sauce
- 3 tbsp (45 mL) finely chopped pitted olives
- 1/2 cup (125 mL) dry white wine
- 2 tomatoes trimmed and diced
- 1 lb (450 g) capellini cooked until 'al dente'
- 5 oz (150 g) Canadian Feta cheese cut in cubes

Preparation
In skillet, sauté garlic, green onions in butter for 1 minute. Stir in shrimp and sauté for 2 minutes while stirring. Season to taste with basil, oregano, salt, pepper and hot sauce.
Stir in olives and wine. Bring to boil and reduce to half. Remove from heat and stir in tomatoes gently. Serve immediately over bed of capellini. Garnish with fresh herbs and serve with cubes of Canadian Feta cheese and olives on skewers.
