Grilled Cod Squares on Aligot

Ingredients
- Aligot
- 2 lb (1 Kg) potatoes
- 1/4 lb (125 g) sliced bacon
- 1/2 cup (125 mL) milk
- 1/3 cup (80 mL) whipping cream 35 % or crème fraîche
- 4 tbsp (60 mL) butter
- 1 egg
- Salt
- Freshly ground pepper
- 1 lb (500 g) Canadian Oka cheese
- Cod marinade
- Olive oil
- Lemon juice
- Fish spices
- 1 1/4 lb (600 g) cod fillets cut in squares

Preparation
Mix olive oil, lemon juice and fish spices. Heat slightly to blend flavours. Marinate cod pieces in mixture 2 hours.
Cook potatoes in boiling water.
Fry bacon until crisp. Reserve fat.
Warm milk and cream then strain.
Mash potatoes, adding warm milk and cream. Blend in butter and egg, beat until very smooth. Add bacon fat to mashed potatoes, season with salt and pepper. Over a low heat, gradually blend in Canadian Oka cheese with a spatula. Keep warm.
Cook cod squares in frying pan or on grill, arrange on warm aligot. Serve with escargot (snail) butter, anchovy butter or garlic butter.
