Grilled Dijon Lobsters

Ingredients
- 4 (1.5 lb/675 g each) live lobsters
- Dijon Sauce
- 1/4 cup (60 mL) Dijon mustard
- Juice of 1 lemon
- 3 tbsp (45 mL) melted butter
- 1 tsp (5 mL) Worcestershire sauce
- 1 tbsp (15 mL) chopped fresh basil
- Ground pepper to taste
- A dash of hot chili pepper sauce

Preparation
In large saucepan of salted boiling water, plunge lobsters head first and cook for 4 minutes. Drain and split lobsters lengthwise with a sharp knife. Crack each claw with mallet or metal lobster crackers. Brush lobster meat with Dijon sauce.
Grill lobsters, meat side down, for 3 minutes over medium-high heat. Brush meat again with Dijon sauce. Close barbecue lid and cook over medium heat for another 15 to 20 minutes. Serve one lobster per person with grilled pineapple slices and rice.
Dijon Sauce:
In a small bowl, mix all ingredients and season to taste with ground pepper and hot chili pepper sauce. Brush sauce on lobsters while grilling or serve with lobster, as a sauce.
