Grilled Sausage and Vegetable Penne

This is the Grilled Sausage and Vegetable Penne recipe.

  • 3 hot or mild Italian sausages
  • 8 small tomatoes
  • 2 onions cut into wedges
  • 1 red bell pepper seeded, cut into wide strips
  • 1 small zucchini cut lengthwise into thin slices
  • 1 tbsp (15 mL) olive oil
  • 2 garlic cloves minced
  • 2 tbsp (30 mL) tomato paste
  • 1 tsp (5 mL) dried basil
  • of chili flakes
  • 1 cup (250 mL) 35 % cream
  • 1/4 cup (60 mL) finely chopped fresh parsley
  • Salt and pepper to taste
  • 1 1/2 lb (675 g) penne or fusilli or rotini

Preheat barbecue to medium. Meanwhile, partially cook sausages on the stove or in microwave.

Place sausages, tomatoes, onions, red pepper and zucchini on greased grill. Barbecue until vegetables are tender around 15 min and sausages are cooked, 20 to 25 min turning occasionally. Remove from heat.

Slice sausages into bite-sized pieces. Chop onions, red pepper and zucchini. Remove skin from tomatoes; chop.

In saucepan, heat oil over medium heat; add garlic and tomatoes. Crush tomatoes slightly; stir in vegetables, sausages, tomato paste, spices and cream. Bring to a boil; simmer uncovered for 25 min or until sauce thickens slightly.

Meanwhile, cook pasta according to directions on package until al dente. Drain.

Stir parsley, salt and pepper into sauce. Toss pasta with sauce and serve immediately.
