Grilled Trout with Lime and Fennel

Ingredients
- 4 trout washed and cleaned
- Olive oil
- Lime and Fennel Marinade
- 1/2 cup (125 mL) melted butter
- 1/4 cup (60 mL) balsamic vinegar
- 1/3 cup (80 mL) lime juice
- 2 tbsp (30 mL) chopped fresh fennel
- Salt and pepper to taste

Preparation
Place trout in a shallow dish and cover with marinade. Turn trout, once or twice, to coat well. Cover and refrigerate for 4 hours.
Cook trout on lightly oiled grill over medium-high heat for 7 minutes on each side. Brush trout with marinade, turning only once. Serve with new potatoes and carrots. Garnish with fresh fennel.
Lime and Fennel Marinade:
In bowl, mix all ingredients and season to taste with salt and pepper.
