Ingredients

  • 3 cups of water
  • Zest of 1 lime
  • 3 star anise pods
  • A small piece of lemongrass (optional)
  • 2 cinnamon sticks
  • ¾ cup of sugar
  • ½ teaspoon of vanilla extract
  • 1 can of Canadian evaporated milk
  • ½ cup of Canadian milk
  • 1 ball of Haitian cocoa

Preparation

Place the cocoa ball in 3 cups of water and bring to a gentle boil over medium-low heat for about 15 minutes, until the cocoa is completely dissolved.

You should end up with about 2 to 2 ½ cups of chocolate-infused water.

Strain the mixture through a fine sieve to remove any cocoa residue.

Pour the liquid back into the pot, then add the evaporated milk, regular milk, cinnamon sticks, star anise, lime zest, lemongrass (if desired), sugar, and vanilla.

Simmer for another 10 minutes over low heat, stirring occasionally.

Serve hot, topped with a little grated nutmeg for an extra fragrant touch.
