Ham and Rice Florentine

Ingredients

  • 1/4 cup (60 mL) butter
  • 1/2 cup (125 mL) chopped onion
  • 1 garlic clove minced
  • 1/4 cup (60 mL) all-purpose flour
  • 1 tsp (5 mL) chicken broth mix
  • 2 1/2 cups (625 mL) Milk
  • 2 cups (500 mL) shredded Canadian Cheddar* cheese
  • 10 oz (300 g) chopped frozen spinach thawed
  • Salt and pepper to taste
  • 3 cups (750 mL) cooked rice
  • 6 slices cooked ham
  • Shredded Canadian Cheddar cheese

Preparation

Preheat oven to 350 °F (180 °C).

In medium saucepan, melt butter. Sauté onion and garlic until tender. Blend in flour and broth mix. Gradually stir in milk. Cook and stir over medium heat until mixture boils and thickens. Remove from heat. Add Canadian Cheddar cheese and stir until it is melted.

Drain spinach and squeeze dry; stir into melted cheese. Season with salt and pepper to taste.

Spoon half of the rice into a 8-cup (2 L) shallow rectangular casserole. Top with half the cheese sauce. Arrange ham slices over sauce. Layer remaining rice then cheese sauce over ham.

Sprinkle with additional Canadian Cheddar cheese and bake 25 minutes or until heated through.

Tips

* Or you can use shredded Canadian Mozzarella, Swiss, Colby, Gouda cheese.
