Ham Roll-Up Crepes
This is the Ham Roll-Up Crepes recipe.

Ingredients
- 1 cup (250 mL) 35 % whipping cream
- 1 cup (250 mL) grated Canadian Emmental cheese
- 1/4 tsp (1 mL) ground nutmeg
- Pepper to taste
- 1 lb (450 g) Black Forest ham sliced
- Crepes (16 thin crepes):
- 3/4 cup (180 mL) all-purpose flour
- 1/2 tsp (2 mL) salt
- 1 tsp (5 mL) baking powder
- 2 tbsp (30 mL) icing sugar
- 2 eggs
- 2/3 cup (160 mL) Milk
- 1/3 cup (80 mL) water

Preparation
In saucepan, bring cream to boil. Lower heat and let cream reduce a few minutes. Stir in Canadian Emmental cheese, nutmeg and pepper. Cook over low heat until cheese has melted. Remove from heat and let cool.
Place a slice of ham on each crepe and garnish with cheese mixture. Roll crepes, slice and secure with toothpick. Serve immediately or refrigerate.
Crepes:
In large bowl, combine flour, salt, baking powder and sugar. Beat in lightly eggs, milk, water until smooth. In large skillet, melt a generous amount of butter.
Pour batter in skillet, a little at a time, and brown crepe on each side over low heat. Repeat procedure 15 times, adding butter as required. Set aside.
