Homemade Nachos and Cottage Cheese Dip

Ingredients

  • Oven-Baked Nachos
  • 1 egg white
  • 1/2 tsp (2 mL) chili powder
  • 1/4 tsp (1 mL) ground cumin
  • A pinch of garlic powder
  • Salt and freshly ground pepper to taste
  • 6 small whole wheat tortillas
  • Cottage Cheese Dip
  • 2 cups (500 mL) Canadian Cottage cheese
  • 2 tbsp (30 mL) olive oil
  • 1/4 cup (60 mL) fresh chives chopped
  • 1/4 cup (60 mL) fresh coriander (cilantro) chopped
  • Salt and freshly ground pepper to taste

Preparation

Preheat oven to 425 °F (220 °C).

In a bowl, mix egg white with spices. Brush tortillas with egg mixture, cut them into slices and place them on a baking sheet lined with parchment paper. Bake in the oven for 5–7 minutes or until tortilla slices are as crispy and golden as chips.

Meanwhile, place Cottage cheese in a bowl, sprinkle with olive oil and fresh herbs, and season with salt and pepper.

Place nachos in a bowl and serve with Cottage Cheese Dip.

Tips

Dip can also be puréed to obtain a smooth texture.
