Honeyed Pork Tenderloin

Ingredients

  • 2 pork tenderloin trimmed
  • 2 tbsp (30 mL) butter
  • 2/3 cup (160 mL) vegetable broth
  • 3 tbsp (45 mL) liquid honey
  • Salt and pepper to taste

Preparation

Cut each tenderloin in half. In skillet, sauté pork in butter over medium-high heat for 3 minutes on each side. Remove tenderloin from skillet and set aside. Pour vegetable broth in skillet while scraping bottom with spatula. Bring to boil. Lower heat to medium-low and reduce liquid by half. Stir in honey gradually, stirring constantly.

Return pork tenderloins to skillet; season to taste with salt and pepper. Cover and cook over medium heat for 2 minutes. Serve tenderloin immediately with cooking juices. Accompany with green vegetables and small new potatoes.
