Irish Dark Chocolate Mousse

Cream and dark chocolate, spiked with Irish cream, are a match made in heaven. For the final touch, garnish this voluptuous dessert, with softly whipped cream, fresh berries or shaved chocolate. Really easy to make, it's a wonderful way to end a meal with friends.

Ingredients

  • 3 1/2 oz (100 g) bittersweet (dark) chocolate chopped
  • 1 oz (30 mL) Irish cream liqueur
  • 1 1/4 cup (310 mL) 35 % cream

Preparation

In a heatproof bowl, set over a saucepan of simmering water, melt chocolate. Remove from heat. Add Irish cream and 1/4 cup (60 mL) cream and stir until smooth; set aside.

In a chilled bowl, whip remaining cream until firm peaks form; fold into cooled chocolate mixture. Divide into 5 dessert cups, cover and refrigerate for at least 2 hours or up to one day.

Tips

Use high-quality chocolate with 70 % cacao for the best flavour.
